Synopsis: Flour protein percentages were nearly the same from wheat receiving applications of nitrogen fertilizer at sowing time and in the flowering stage, but valorimeter values were significantly lower from applications made in the flowering stage. Rates of nitrogen fertilizer produced significant differences in flour protein, flour yield, absorption, valorimeter, and loaf volume.
